Objective

The objective of this project is to determine the effect of storage on soakability of dry beans in commercial canning. Our nuclear magnetic resonance (NMR) study is to provide a fundamental understanding of the relationship between physiochemical changes as a result of storage and soakability.

Need or Impact

The study helps to understand the effect of storage on dry bean soaking and variations among bean varieties. The information obtained may lead to improved utilization of stored beans.
